‘Eat, Drink and Dance’ just took on a whole new level of extravagance! Bursaria’s newest venue, The Refectory at Werribee Park has captivated us with it’s classic architecture, high ceilings and stunning backdrop. The Refectory is a fusion of modern grandeur and heritage charm nestled within the formal gardens of historic Werribee Mansion.

With enough options for ceremony locations to allure any bride, we can’t pick the best part! But we think having pre-dinner drinks and canapés on your exclusive front lawn overlooking the elegant architecture of the Werribee Mansion is closely tied with enjoying Bursaria Fine Food’s winning menu and bubbles at sunset.

We sat down with Sara O’Callaghan, the brains behind Bursaria Fine Foods, an award-winning Melbourne caterer and exclusive caterers at The Refectory.

What was your inspiration for the business?

From a young age, I loved food and dreamt of travel and I quickly learned that through hospitality I could experience both. I’ve worked for luxury hotels, restaurants and travelled the world fulfilling my passion to combine travel and cooking. In 2005 I opened my own business and café, ‘Bursaria Fine Foods’. Working amongst the beautiful landscape gardens and breathtaking heritage buildings at Como House in Melbourne was an inspiration and formed my desire to work within Heritage precincts. Over 12 years later, being the exclusive caterer for The Refectory Werribee Park and The Abbotsford Convent is a dream!

What are you offering that is different from the rest? 

We are truly excited about everything we do! The combination of being able to provide our amazing tasting catering for weddings, functions and events, combined with offering an award-winning service that provides a beginning to end experience and wows our guests makes each experience truly unforgettable. Bursaria is such a creative place to work!

What does a normal day look like for you?

We get to start our day at either of our extraordinary venues. Having our HO on the grounds of The Abbotsford Convent is amazing. The precinct is a thriving artistic community and well… the Heritage Gardens is the perfect view from our window! Then, imagine having over 10 acres of exquisite gardens at Werribee Park as your backyard. Just walking through the gardens and to our office in The Refectory is a dream. Being a part of two creative communities and architecturally significant venues is an enriching experience for everyone at Bursaria.

What do you love most about your job? 

Everything! We get to combine our love for catering, host hundreds of weddings a year and have fun catering for major events like Melbourne Food Wine and Werribee Polo. And then there’s the talented and creative suppliers we meet along the way…  what’s not to love!

We’ve developed a brand known for its’ exceptional service and delicious catering. Our creativity along with our ability to forecast trends makes each season unique and being able to be creative is what we love and sets us apart.

I am extremely proud of how Bursaria has grown from its humble beginnings and café to an award-winning Australian catering company. We are so excited to deliver weddings and events at The Refectory. It’s our passion.
